‘It isn’t all beer and skittles’

It’s hard to picture what many of Christchurch’s buildings looked like before the earthquake. For many locals the torn down remains of a building or an empty lot remind them of a favourite hangout, a birthday or even the best burgers in town. The archaeology that has been excavated and collected from these sites and buildings provides evidence of earlier and equally personal stories and events, proving these buildings were full of life for over a century. One example of this is the Oxford Hotel, also known as the Oxford Family Hotel, the Oxford Victualling Co. and latterly as the Oxford on Avon.

The Oxford Hotel was located on the corner of Oxford Terrace and Colombo Street and was one of the city’s older hotels. Originally established as a boarding house by Antill and Sarah Adley in 1860 or 1861, the hotel gained a licence to sell alcohol in 1862 and began operating as a pub as well as a boarding house. It was at this time that the establishment was renamed the Oxford Family Hotel (Greenaway 2007: 14). Adley had proprietorship of the hotel until his retirement in 1873 (The Cyclopedia of New Zealand 1903) and continued to own the land and lease it out until 1903 (Christchurch Deeds Index C1 c.1853: 616). The hotel lease was purchased by Mr. and Mrs. Joseph Dann in 1875, who transferred the lease to Mr. Bately, who rebuilt the building in 1883 (this was the building that stood until the earthquake; Star 5/6/1883: 3). What we found from the archaeological data and historical records is that this building not only acted as a hotel but as a central hub for the wider community, which was not uncommon for 19th century hotels in New Zealand.

The hotel was nice and close to Victoria Square, first known as Market Square and a centre of activity in early Christchurch. This must have been good for business and it allowed the hotel to cater to the wider community, hosting meetings and events, acting as a morgue or emergency room in some cases (Press 15/4/1879: 2; Star 4/2/1890: 3), and all the while supplying cheap alcohol from the pub. During Dann’s operation of the hotel he offered membership to a skittle alley and often hosted skittle and quoit tournaments. Mail and messages could be left at the Oxford by or for patrons (Star 28/4/1869: 3), so it functioned as a post office too. Most importantly, though, the Oxford Hotel was a pub: Dann’s advertisements in the local newspapers constantly mentioned the array of spirits available, with an emphasis on the cheap prices.

Of the 925 glass artefacts recovered from the site, 395 were black beer bottles, 196 were wine bottles and another 99 were other liquor or spirit bottles. There were also 52 porter or stout bottles. Sounds like a lot of alcohol, right? Think again. To put it into context, even if only one bottle of alcohol were drunk a day, this would represent little more than two year’s drinking. So where did all the other bottles go, then? Well, the Avon River was conveniently close…

A number of smoking pipes were also found, confirming that the combination of alcohol and tobacco was just as common in the 19th century as it is today. Many of the pipes were made by Charles Crop, a manufacturer from London whose pipes have been found on hotel and residential sites in both New Zealand and Australia (Brassey 1991: 30; Macready et al. 1990: 57). Tantalisingly, the embossing on some of the pipe stems hints at the origins of some of the smokers: “QUEENSLANDER” and “LACHLANDER”. Perhaps the smoker purchased these as a reminder of home.

One surprising aspect of the archaeological assemblage was the large array of pharmaceutical bottles. The bottles included anything and everything, from Barry’s Tricopherous – which claimed to preserve, restore and beautify the hair, preventing baldness and grey hair (Nelson Evening Mail 29/1/ 1870: 3) – to items such as Piesse and Lubin’s perfumes. Items of medicinal use were also recovered, such as Kay Brothers Essence of Linseed, for those pesky coughs, and J. C Eno’s Effervescing Fruit Salts for indigestion. A toothbrush and toothpaste jar were also recorded. Perhaps these were personal items used by the proprietor’s family, or by guests who stayed there. Or perhaps these were offered to guests in the way that complimentary shampoo and conditioner are offered today – after all, it was advertised as first class accommodation.

A significant quantity of cups and saucers were also found, indicating that the hotel was serving more than just alcohol. The tea cups and saucers collected from the site were largely porcelain and decorated with a gilt tea leaf or sprigged design. A number of whiteware teawares were also gilt-banded and it may have been that the hotel had a gilt decorated tea set.

Efforts to provide a first class establishment are also evident in the ceramics used as serving ware. Serving wares, such as tureens, and dining ware, such as plates, were also recorded in large numbers. A number of ceramics were decorated with the Asiatic Pheasants, Willow or Beauty patterns, suggesting that the hotel may have had several matching dinner sets. Although all these patterns are common in 19th and early 20th century archaeological sites, they would have completed the dining room experience and that feeling of first rate service for hotel patrons.

Like many New Zealand hotels, the Oxford Hotel appears to have offered some more ‘exotic’ meats on its menu, including birds, cockles, oysters and a little bit of fish. The remains of these non-mammalian meats are rarely found at 19th century European archaeological sites in Christchurch, except at hotel sites. As today, people went out to eat more exotic meals than they might have had at home. From the sheep bones, we know that roast legs of lamb or mutton were being served, and may have been the most popular meal at the hotel, followed by cuts from the shoulder.

The evidence from the Oxford Hotel says many things. It tells us how the hotel operated as just that, a hotel. It provided guests with a first class dining experience that included matching dining sets and porcelain tea sets. It was a place where people drank beer and wine while overlooking Victoria Square and the Avon River. But the evidence also remembers the building and the people who operated and frequented a local and successful pub, where alcohol was consumed in quantities, where pipes were smoked leisurely and a game of skittles echoed in the background. It was a hub, a central link to Christchurch’s development and maybe, just maybe, someone’s favourite place in 19th century Christchurch.

‘Is your breathing embarrassed?’

Many of you will probably have heard of Baxter’s Lung Preserver, a local Christchurch product created in the 19th century and still sold today. Bottles of Baxter’s, with the name of the product embossed on the sides, are common finds on late 19th century sites throughout Christchurch.

As far as we know, the product originated in the late 1860s in Christchurch as the brainchild of a man named John Baxter, who set himself up as a chemist in the young city. The actual start date of the business is a bit unclear, as we have one advertisement from 1884 that claims over 25 years of operation (suggesting a date of 1859; Taranaki Herald 1/02/1884: 4) and another from 1939 that claims a 75 year history (suggesting a date of 1864; Evening Post 16/10/1939: 13). The 1864 date seems more likely, since we know that John Baxter died in 1895 at the age of 49 (Star 14/09/1895: 4), meaning he was born in 1846. It’s a little unlikely that a 13 year old would start a pharmaceutical business, but an 18 year old doing so isn’t quite so much of a stretch.

Whatever the start date, it’s clear that by the 1870s, Baxter was well established in Christchurch, with premises on Cashel Street in something called ‘Medical Hall’ (Star 13/08/1875: 4) as well as on the corner of Victoria and Durham Street. The business continued at the Victoria Street address well into the 20th century, with his sons taking over after Baxter’s death in 1895 (Cyclopedia of New Zealand 1903).

Like George Bonnington, John Baxter became well known for his own creations, and also sold products created by other chemists. Along with his lung preserver, Baxter advertised Baxter’s Anti-Neuralgic ‘magic pills’, Compound Quinine Pills, cures for indigestion and remedies for liver complaints. He was also known to stock herbal remedies and ointments from a Professor O. P. Brown, as well as non-pharmaceutical objects like the 1885 Shakespearian Almanac and various other things (Press 17/04/1885: 4).

Like so many pharmaceutical remedies of the late 1800s, Baxter’s was often advertised in local newspapers using testimonials from apparently satisfied clients. Just a quick scroll through 19th century newspapers from all over the country brings up countless enthusiastic letters and quotes from “faculty, clergy and others” who claimed that Baxter’s Lung Preserver had cured them of their ills and succeeded where other remedies had failed (Press 04/08/1873: 2).

Other advertisements played on concerns of the time and offered to cure a range of complaints, most of which were respiratory illnesses or problems – cough, colds, bronchitis, congestion of the lungs. My personal favourite offers Baxter’s Lung Preserver as a remedy for “embarrassed breathing” as well as the more common respiratory problems (Evening Post 29/01/1887: 2).

We’re not sure exactly how effective Baxter’s Lung Preserver would have been at curing the things it claimed to fix, since we don’t know exactly what was in it. The modern version, still sold today, uses the active ingredient ipecacuanha (a Brazilian plant used as an expectorant and emetic; API Consumer Brands 2013), but we have no way of knowing if this is the same as the Victorian recipe. Some anecdotal information suggests that it might have had a high alcoholic content, which would be in line with many of the other patent medicines of the time, especially those directed at coughs and colds.

Whatever its ingredients, it’s clear from the wealth of historical information and archaeological finds, that Baxter’s Lung Preserver was a hugely popular product, not just in Christchurch, but throughout New Zealand. It’s a testament to Baxter’s legacy and the tenacity of his products that his business lasted so long after his death and his products continue to be sold in shops today.

Cleanliness and Quality Combined

It came as a bit of a surprise when over 1000 fragments of broken stoneware jars were unearthed at an otherwise ordinary Christchurch archaeological site.

But there, sitting under some old petrol tanks, was Christchurch history waiting to be found.What made this very large assemblage more interesting was the clear warning emblazoned along the base of some of the examples: “PERSONS DETAINING, MISAPPROPRIATING OR TRADING WITH THIS JAR ARE LIABLE TO BE PROSECUTED”.

Initial research for this address, located along Worcester Street, had not returned much information. An 1877  map showed the section was empty but there were buildings on the surrounding land. We know that in the early 20th century the lot was owned by Henry Thomas Joynt Thacker, a “colourful”

mayor of Christchurch (LINZ 1911; Rice 2012). A resident for the street number used today, however, could not be found, with only the adjacent street numbers mentioned. Enter archaeology. After the ceramics had been thoroughly cleaned, the name ‘Sharpe Bros’ appeared, printed or impressed in different fonts and of varying quality. This narrowed research down from any time in Christchurch’s historical record to the time between 1908 and 1914, when the Sharpe brothers, cordial manufacturers, had a factory one number down from the site in question.

The Sharpe brothers hailed from England, with the eldest brother John Sharpe moving to warmer climes to improve his health in 1900. After joining his brother Percy, who had immigrated to New Zealand earlier, the two opened the first Sharpe Brothers cordial factory in Dunedin in 1903. Apparently not ones to waste time, by the end of 1905 Sharpe Brothers manufacturers could be found in Christchurch, Wellington, Auckland and Sydney (Sharpe 1992). The two brothers were prohibitionists and prided themselves on their non-intoxicating drink. The Sharpe Brothers operated in New Zealand until the final branch in New Plymouth closed its doors in 1981 (Wellington Antique Bottle & Collectables Club 2003).

The rather intimidating warning found on some of the fragments made sense now, too. The Sharpe Brothers, like most manufacturers of one-gallon stoneware jars, saw the large vessels as loans and these were not purchased when you bought the drink that the jar contained. A look at old newspapers from around New Zealand showed that the Sharpe Brothers just as frequently advertised their goods as they printed warnings that asked for their one-gallon bottles to be returned. The jars were a key component of the early Sharpe Brothers company. These jars were not only what they sold their product in (until the 1930s) but the names impressed on the front showed ownership and were a form of advertising (Sharpe 1992). But were jars returned? And if they were, were they re-used? How long were the jars used for? And what did they do with all the old jars?

Well, there are at least five different types of Sharpe Brothers one-gallon jars recovered from the site. Some were made by Doulton and Co. from London and another was made by P. Hutson and Co. from Wellington. Some had handles pre-dating John Sharpe’s patented wire handle in 1904 (Sharpe 1992), and some were decorated with taps and displayed the medals Sharpe Brothers were awarded at the 1906-1907 New Zealand International Exhibition.

Even though the company had been operating in Christchurch since 1905 the section wasn’t used by the brothers until 1908, therefore the presence of the handled jar forms from before the 1904 wire handle patent indicate that jars could be in rotation for a number of years. This is further evidenced by the presence of the jars made by Doulton & Co., which could have been the jars ordered from England in 1905 (Press 20/4/1905). The two manufacturers and different styles present means that rather than discarding an old design when a new one was introduced, Sharpe Brothers probably used the old jars until they broke. The mass grave of these old ceramic vessels suggests that when the jars broke, they were tossed into a hole out the back of the property. Though the density of the deposit could indicate that the old jars were used as foundations. In the Sydney branch the old unwanted Sharpe Brothers jars were broken and used in foundations when the focus shifted to crown seal bottles (Sharpe 1992). It could also be that in Christchurch the old bottles were kept to the side to be repurposed later and in 1914, when the factory moved to Armagh Street, they decided to dispose of all old stock instead of moving it to the new premises.

Amongst all the Sharpe Brothers jars was a single example of a Ballin Brothers ginger beer bottle. Was it accidentally returned to the wrong place? Or was it a rebellious act of drinking the competition at work?

We never know what artefacts, if any, lie beneath the ground. But that’s the point. Archaeology can not only point us in the right direction to research a site’s history but can add depth, insights and evidence about the day-to-day workings of an influential New Zealand business. It may not always seem like it but it’s important to remember that fragments of broken, dirty, petrol-covered jars from a company whose motto read “Cleanliness and Quality combined” are as much a part of Christchurch’s history as carefully preserved papers.

Let me tell you a story…

Historical archaeology has many facets, it includes recording buildings and features, artefact analysis, names and dates, but if you take a moment, collaborate all that data, you have a powerful tool for telling someone’s story. Some call this type of analysis ‘interpretative archaeology’ or ‘storytelling’ and both of these are right in a way. In its most simplest form, it is an attempt tell the story of those ordinary moments lost in time. When an assemblage containing a large number of children’s toys came through our doors we believed we had a topic to blog about. If we could, through the analysis of both the archaeological remains and the historical documents, identify the children who had played with these toys, how interesting would that be, what stories could be told. I’ll be the first to admit it, this proved more difficult than I initially anticipated.

These artefacts were part of an assemblage from Moorhouse Avenue, where over 600 artefacts were recovered, many of them domestic in form. Preliminary historical research showed that there was a house on the section in 1877; however, the vague nature of land transaction records and land occupation records mean that we can’t definitively pin down who lived in this house. This was complicated further by a range of other factors: the owner of a section was not always its occupant in 19th and early 20th century Christchurch; the next map or plan that shows the area in question wasn’t published until 1915 (LINZ 1915); and, worst of all, the street numbers in central Christchurch changed completely in 1911 – the streets were numbered from a different end, and the odd and even numbers switched sides. One can only describe this as a researcher’s nightmare.

In spite of these complications, we know that the section was the site of domestic occupation until the mid 1910s (when ownership was taken over by the Tai Tapu Dairy Company), and we have at least two potential candidates: Jason and Maggie Isbester, who may have lived on the site from 1905-1908; and Frederick Hammond, who may have lived on the section from 1908 to at least 1913. But both proved elusive in the historical records, so we had no way to confirm our hypotheses.

So in absence of definitive historical records we turn to artefacts: what do the artefacts tell us, what story do they unravel to both the trained and untrained eye? A number of artefacts can be identified as ‘early’ due to their functional nature. The presence of candlesticks, gas lanterns and chamber pots suggest occupation of this house predated the advent of utilities such as sewerage and electricity. Moorhouse Avenue was connected to Christchurch’s sewerage system by 1882 (Wilson 1989) and electricity was available in the early 1900s. These artefacts represent Christchurch prior to the installation of modern services.

Whoever was living at the site in the late 19th and early 20th century appear to be reasonably affluent and may have been from the middle class. This assumption is based on the composition of the artefact assemblage, with a number of food serving dishes and the large number of children’s toys and other personal items. A number of serving platters or deep square dishes, champagne bottles, vinegar bottles and food vessels suggest the occupants liked to entertain at dinner parties, as was common for the middle and upper classes in the 19th and early 20th century. To find such a concentration of children’s toys in a single archaeological deposit is rare, as children are often surprisingly invisible in the archaeological record. Items of personal hygiene included everything from a toothbrush and accompanying toothpaste jar but also numerous perfume and cosmetic jars.

A variety of pharmaceuticals were found in the deposit, which suggests a reliance on selfmedication for ailments – this is a common feature in historic New Zealand sites and as common as finding a Panadol box in your rubbish. Some of those bottles found included Jeyes Fluid, which acted as a disinfectant and antiseptic, Wood’s Great Peppermint Cure for coughs and colds and one called Kruschen salts which, well, let’s say it dealt with the more unpleasant side of the digestive tract.

A number of paint supplies were also collected from the site, with one paint dish identified to Reeves and Son Ltd, a firm which started operation in 1891 (Grace’s Guide 2007). It is assumed that the paint brushes found in the site were used at the same time as the paint dish, due to their functional association.

So what does it all mean really? I did say we tend to use numbers, dates and names.  But we also tell stories. Perhaps what we have is a story of a girl in the late 1890s who grew up in a somewhat affluent Christchurch home. As a daily chore she would exit the rear of her house and empty the chamber pots and as payment for her daily chores her father, the painter, rewarded her with toys (given New Zealand’s “servant problem”, there was probably no servant). As she sits with her figurine dolls and her tea set, her parents entertain with food served in large Willow patterned and Wild Rose vessels with candles glimmering in the night light. The cold air means the Wood’s Great Peppermint Cure will be on hand tomorrow. Actually, her mother’s bad cooking probably means Kruschen will be used as well. As the wine pours, the little 19th century girls heads to bed, she brushes her teeth and says her prayers, for tomorrow is another day of more chamber pots and the promise of new toys.

This is only one interpretation, and yes, it is a story but it’s that one moment lost in time given life for a brief moment. Perhaps I could encourage you to offer us your interpretation?

Medicating the masses: a wholesale druggist in Edwardian Christchurch.

In our last post, Jeremy talked about the site of H. F. Stevens, wholesale druggist, on Worcester Street near Cathedral Square. We excavated the site in 2011 and found a number of artefacts, including the Udolpho Wolfe’s bottles featured last week. We also found a range of other pharmaceutical remedies, local and international in origin, and a few household artefacts. These artefacts let us catch a glimpse of what went on inside a successful wholesale pharmaceutical company in Edwardian Christchurch.

Henry Francis Stevens established himself as a wholesale druggist in 1887. It’s not clear whether he had any official medical or pharmaceutical training before he began his business , but his father, George, had been a dispensing apothecary in England. It’s quite likely that Henry gained some experience with the distribution and retail of pharmaceutical products as a result of his father’s occupation and applied it to his fledgling business in Christchurch.

Initially, Stevens operated out of a building at 112 Manchester Street, but shifted to premises at 138 Cashel Street in the early 1890s.  Finally, in 1906, he moved again, this time to a large custom-built building in Worcester Street, a prime location in the heart of the Christchurch’s central business district. The new building was designed by local architect Alfred Henry Hart, who died fairly soon after its construction, in 1908. Described as having an “elaborate Edwardian façade” (Christchurch City Libraries), the building was laid out with a warehouse and yard to the rear and offices and a service counter at the front of the building. Stevens employed a number of clerks and assistants in the business, who would have filled these offices and manned the counter every day.

Stevens was a successful businessman, something we can see in the numerous advertisements for his products in the newspapers of the time. These ads tell us that he sold and distributed all kinds of things, from culinary essences, scented oils and shampoo to cures for dyspepsia, coughs, headaches and various other ailments. Products like Golden Valley Ointment, Wilson’s Pepsin and Cascara, Hendy’s Celebrated Juleptia for the Hair and Loasby’s Mighty Cough Cure were all available ‘wholesale from H. F. Stevens’.

During our archaeological investigation of the site, a range of domestic and commercial artefacts were found, including a toothpaste pot, food-related objects, animal bones and soda water and alcohol bottles, as well as a large number of pharmaceutical and cosmetic containers. This is typical of the range of artefacts found during the archaeological excavation of late 19th and early 20th century businesses in Christchurch.

The pharmaceutical bottles and cosmetic products found would have been stocked in the H. F. Stevens warehouse and sold, along with items like the toothpaste pot. A number of different ink brands were excavated, including Stephens Ink, Fields Ink and Antoine’s ‘Encre Japonaise’. These were almost certainly used by the clerks employed by Stevens, as they recorded incoming and outgoing goods and kept the accounts of his thriving business. It’s possible that the soda water bottles (sometimes known as aerated water) were also being sold on the premises, but it’s equally possible that they were being drunk by Stevens or his employees during their working day.

And what about the food-related artefacts found at the site? These included a platter, a tureen and an egg cup, as well as the bones from several meals, a jar of anchovy paste and salad oil and Worcestershire sauce bottles. While the last three products may have been sold by H. F. Stevens, the presence of the other meal debris suggests that meals may have been served at the building. Not enough is known about the company to know whether they may have served their employees meals, or whether they may have had functions for the directors on the premises.

Although we found numerous pharmaceutical bottles at the site, only a few were labelled with a product name. These included cosmetic and so-called medicinal products such as Bonnington’s Irish Moss, Eno’s Fruit Salts, Barry’s Pearl Cream and Resinol. Both Bonnington’s Irish Moss and Eno’s Fruit Salts may be a familiar names to many, as they’re still made today.

Bonnington’s was created by George Bonnington in Christchurch in the 1870s and sold throughout the following decades for the relief of coughs, colds and other respiratory illnesses, while Eno’s Fruit Salts were marketed as an antacid or remedy for gastrointestinal complaints. Resinol and Barry’s Pearl Cream, on the other hand, were both cosmetic products. Resinol (“for a fresh and velvety complexion!”) was created in Baltimore, Maryland, by Dr Merville Hamilton Carter, while Barry’s Pearl Cream (“for an alabaster complexion!”) was first made by an American named Alexander Barry, in New York.

One of the most interesting things about the pharmaceutical bottles from the site is that no advertisements were found in newspapers of the time connecting H. F. Stevens with these products. This is despite the many, many, advertisements found in contemporary newspapers for products sold by Stevens. This contrast between the archaeological and historical record highlights the power of archaeology to provide us with information about a site or a business that might be missing from the historical record.

Although we didn’t find many artefacts from this site, they did tell us some things about H. F. Stevens’s business that we weren’t aware of. From products we didn’t know he stocked to information about the daily activities of the people he employed, the archaeology revealed some of the little pieces of history that had been lost from our records and, in doing so, enriched our understanding of this site and its place in Edwardian Christchurch.
